Definition of Term

(English) Japanese method of quickly killing fish such that quality is retained; used for sashimi. First the skull is pierced or cored and the brain destroyed, then the spinal cord is destroyed by inserting a thin rod along its length. (See also: sashimi, brain)
(French) Méthode japonaise pour tuer rapidement un poisson afin d'en conserver la qualité ; utilisée pour le sashimi. Le crâne est d'abord percé et le cerveau est détruit, puis la moelle épinière est détruite en insérant une mince tige dans le canal rachidien. (See also: sashimi, brain)
