Definition of Term

(English) (Italy) Roe from mullet, tuna or other fish, lightly salted, pressed and dried; also called Botargo in North Africa. Similar product in Japan is Karasumi, from mullet, which is desalted by soaking in fresh water before drying. (See also: Mullets, Tunas)
